Our 2011 Cabernet Sauvignon is a surprising gem of the vintage. It has aged perfectly and is drinking exceptionally well. It is filled with the flavors of red currants, anise, cinnamon and black pepper. Subtle toffee and hibiscus accentuate its depth of characters.
This wine was barrel fermented for 14 days under native yeast. It was matured for 26 months in 100% French Oak barrels - (50% new and 50% used only once before). Upon bottling, it was unfined and unfiltered. The goal throughout was to nurture and protect as much as possible, to retain as much essential flavors as the vineyard site, vintage, and terroir had to offer.
Our winemaker committed to finding some of the best grapes from Spring Mountain in 2011. While a challenging year for most of Napa, Spring Mountain growers managed their vine canopies and opened them to take advantage of sunlight, warmer nights and mornings on the hillsides. The light and well drained hillside soils came through it all, exceeding expectations. Harvest was on October 31st, which
allowed us to have some of best quality grapes offering rich character.
